Yum I love Feijoas Bumping for Feijoas, does any one know why you can buy Feijoa wine by vineyard called Lorithin near puhoi in Auckland!

Oh forgot to say for the juice recipe above that you have to mash the feijoas up with a potato masher after you've scooped them into the bucket.

Feijoa, Banana and Toasted Coconut Caramel Crumble 3-4 large bananas
6-8 feijoas, peeled (I do more)
1 vanilla pod seeded, or 1 tsp pure vanilla essence
2 tbs soft brown sugar
1 tbs butter

For the Crumble
1 cup shredded coconut strands
1 cup white flour
1 cup soft brown sugar
1 cup caster or white sugar
1 cup milk oaties or rolled oats
75 gm butter at room temperature

cont. Lightly grease the base of an ovenproof baking dish.Roughly cop the bananas and feijoas and mix together over the bottom of the dish.Sprinkle over the vanilla seeds or essence, followed by the brown sugar.Cut the butter into small pieces and dot over the fruit.The plan is to leave this aside while you do the crumbleso the juice from the feijoas and brown sugar start to caramelise.

Place the coconut on a baking sheet or into a roasting pan and toast in the oven for about 3 minutes on 180C, until lightly golden.Watch it carefully.Remove and let cool.

cont. In a deep bowl, mix together the flour, oaties and sugars.Add the toasted coconut reserving a little to sprinkle on top later if desired.Cut the butter into rough pieces and rub it into the dry ingredients with the tips of your figures until well mixed in.

Crumble this mixture over the fruit in an even layer then sprinkle the remaining toasted coconut over the top.Bake for about 20 minutes at 180C until you can see the caramel bubbling just under the crumble.Let cool slightly before serving.

Feijoa juice recipe for all you people wanting to know how to make nice feijoa juice. Scoop the flesh out into a sterilized bucket or container until you have about 5 litres worth. Put a teaspoon of pectolase enzyme and a campden tablet in. The pectolase enzyme breaks down the cell walls and destroys the pectin. Pectin is a gelling agent so you don't really want that in your juice. Stir it up and leave for between 12 and 24 hours, no longer. Strain the pulp through a fine mesh bag or cheese cloth. Try to get most of the juice out without squeezing the bag because little bits of flesh will get through if you squeeze and will rot. So I usually squeeze the last bit into a glass and drink straight away.

I have frozen blended feijoas, can I use this in cakes or muffins, instead of chopped feijoas!I used to scoop out, blend and freeze as ice cubes or ice blocks for kids. I have too much this time, thought of using it in cakes.

Little Feijoa and Coconut cakes These are really yummy.
100g butter, softened,1/2 cup sugar, 2 eggs, 1/2 cup coconut, 3/4 plain flour, 1 tsp baking powder, 4 feijoas peeled and sliced. Heat oven to 160 fan bake.Grease muffin tins.In a bowl beat butter and sugar with electric mixer until pale and creamy.Beat in eggs one at a time.Stir in coconut and flour and bp. Spoon mixture into tins and arrange a few feijoa slices over the surface of each cake.Bake for 30 minutes or until a skewer inserted comes out clean.

OK. I have 3 shopping bags whole in freezer, made heaps of feijoa sorbet very yummy, feijoa jelly and 2 bags sitting on kitchen floor, need a really easy no fail hit with kids recipe, kinda over it now but will have huge regrets if I don't continue.

Sorbet not sure if this is a repeat but
1 cup of water, 1 cup of sugar, 2 TBS lemon juice and 1 cup of feijoas. Water and sugar together boil till sugar disolved, let cool. add 1 cup of feijoa puree and lemon juice pour into metal container and freeze till 1/2 frozen, top will look chrystaly. put in food processor and beat till light and fluffy, repeat two times and then freeze in small containers. very rich so you only need a small amount with ice-cream or whatever.

Dunedin ppl.Do Feijoa not fruit there.Wonder what the cost and best way to send some from the Far North to Dunedin,where my Sister is now living.Also can someone please let me know if I can just scoop out the F fruit and freeze for a few Months.

yeah, bought 2 at the supermarket yesterday, for $1.10, then on the way home $2 a bag at a roadside stall. wish i had enough room to grow a tree. Will send some down to blenheim to daughters, as they arent there yet.
poor sis in brisbane, is so hanging out for some. wonder if i could send her some. LOL....

This is an adapted carrot cake [low fat recipe].From a Delia Smith book "How to cook vol 1.' That is not to say it is low in sugar! I don't make it with icing, occasionally dust it with cinnamon. Everyone enthuses each time i make it.

We have also just been scooping out the flesh and freezing them - no syrup as in in previous years, works fine. Seems to be a bumper year due to relatively long hot summer.
