Hate Dean for a judge and the show is called home baker not trained porfessional baker he needs to be realistic !

Both he and the woman judge have the personality of wet cardboard. At least Colin adds a bit of humour and spark, although he has obviously been told to tone it down this season.

For bakers they seemed a bit green on working with dough. Maybe judge Dean scares them, recon his requirements are way to high for non trained bakers. Still think its a bit pathetic, not nearly as good as last series. Ha Ha Colin has cleaned up his act and toned things down a bit, very quiet isn't he.

It's High grade flour.
adding - I use the home brand or whatever each store's own brand is.

Bread flour has a higher gluten content.

If you can't get bread flour, high grade will do

Last night's episode was a major yawn.
The only exception being what some people had put in their chelsea buns - extra flavours like cumin and ginger etc.

Ben "finger wiping" the icing .ewwwww.

I know that any cookor chef has to touch their food to a certain extent during both preperation and presentation(and I've certainly no problem with that at all, especially before it's been cooked).But Ben's technique grossed me out - I don't give a rat's bottom if "baking professionals" do it.

i know what you are saying-but i do think his icing looked the best-when you buy the buns from bakeries the icing has a bit of a rough look,perhaps they finger wipe them too,lol.

Agreed, and silly when they don't eliminate anyone at these early stages, especially when at least two contestants were not up to scratch on that challenge.

Usually these shows have a "reprieve" in later eliminations, near the finale which works well.I guess they've probably scheduled for that anyway, which is why they had to act on the situation, created by Hamish leaving, immediately,

I just find Dean such a bore. acclaimed baker or not, he's still causing me to yawn. I reckon my sweet buns (sounds a bit naughty! lol) are better than those produced yesterday with his recipe. Can't call mine chelsea buns cause strictly speaking they're not.

I like him.He doesn't subscribe to razzle dazzle showmanship - he's not gushingly ebullient, nor is he calculatedly nasty.He's no nonsense and to the point - just a knowledgeable expert carrying out the responsibilities he's been assigned to.He reminds me of the Top Chef judges, who are similarly restrained in their manner(though that's a programme showcasing a very different level of cooking of course).

I agree with you miri.I liked Pauline Nunns from the first series.She is a local Wellingtonian and very well respected but I guess her manner wasn't razzle dazzle enough to pass muster,or perhaps one go was enough for her. I think Dean is just focused on getting the contestants to do better than they think they have the ability to do and forgets to do the show-bizzy thing.

@131 - I think you're missing the point, this is a show about amateur home bakers. Not trained professionals. I used to be like you, I never watched the show previously and had the "I can do better attitude" until this year when I actually applied! Its harder than it looks, trust me. It is a TV show and as such its set up for dramas/failures as that seems to be what they want to highlight.

Sometimes you have to take the bull by the horns and put yourself out of your comfort zone. I am sure you are a wonderful baker and if you are not professionally trained then I encourage you to try out next year and show us all how its done!
