Why do my corn fritter stick to my frying pan?

why do my corn fritters stick to my frying pan!
can't work out why.

is the pan too hot, too cold, not enough oil (but I do use a generous quanity)!

Often if you try and turn pancakes or fritters too soon, they will stick.Experiment with temperatures - a medium high heat should be best, allowing the fritters to cook through without burning on the bottom.Leave the fritter as long as possible, before flipping it.Try a non-stick frypan if you're not using one already - also, it's best to have a pan which you use exclusively for eggs and batters, which you should never scrub (a simply dousing in boiling water should be enough).

I use a mix of oil and butter but, like miri_s, choose a medium heat rather than the high one (it's tempting to throw them in on high for browning).They still brown nicely but don't stick, even in the cast-iron frypan which is my pan of choice.

make sure your oil is hot before putting batter in . !

If you feel you fritters aren't cooked but have browned enough, pop into the oven to finish cooking, also this keeps warm until rest of batch finished.

Make sure your batter is also at room temp. Cold batter or mixture/hot pan = sticking.
