I was gifted plums

3.5 kg of plums. yellow flesh.
I have added
2 liters of fresh peach vinegar
1 litre of red wine vinegar
1 kg of brown sugar
2 Tbsp sea salt
2 tsp gr. mace
1 tsp cayenne pepper
2 tsp gr. cloves
5 tsp gr all spice
It tastes ok right now, I am not going to addanything else until it has simmered for 1&1/2 hours, and has been through the mouli.
I hope it will be ok as I am giving this lot away.

Where do you buy mace from! I've used nutmeg as a substitute in baking etc,I haven't seen mace available for ages.

I am not sure where I got my last lot from. I am thinking it maybe have been an Asian spice shop. I have 2 tsp left, I will be shopping for some this week sometime. I have been told it is hard to find. I let you know where, if I find some.

Yes I searched high and low looking for mace, didn't, find it- mace is ace!

All done. I did not add anything else to this recipe.
It could have done with another 1/2 a kg of brown sugar, spices were good, I am sure the recipients will be happy.
The recipe yeilded, 6 X 750 mil. wine bottles of sauce.
