Blanching peas and freezing truffles

I have spent hours podding peas lol and now to blanch them, do you just bring to boil or what!And i want to make up some mint slice truffles to use up my cream cheese by use by date.I normally chocolate coat my truffles so do i freeze them chocolate coated or do chocolate coat on unfreezing.much apprieciated adivce

Hell no. Blanching means boil your water first, then dunk them for a minute, or in the case of peas a few seconds, then dunk immediately into ice water. You're killing off enzymes, not cooking them.

i'm pretty sure you freeze the truffles then choc coat them :)

You can freeze them coated or uncoated.I've done both - they sweat when removed from the freezer - best to serve them straight away.If dipping after being frozen, I just roll them around on a paper towel first so there is no moisture (and therefore chocolate doesn't seize).
