why do peeps use them in so many meals! I've seen them in Egg & Bacon Pies etc.

Because they're convenient and on the whole are just as good as fresh vegetables. Though no doubt others here will have different opinions.

I keep them to put into fried rice, bulks it out nicely and adds flavour and colour (and hopefully vitamins) since they are snap frozen.I used to be prejudiced against frozen vegetables but my attitude has softened with time.

i use mine to bulk up meals, sneak veges in to my kids. and theyre just really convenient.

The only people I know who use it a lot are the non-cooks.
My late Indian Ringneck loved them. Ate the corn first and then the peas and then the carrot. Any remaining carrot cubes got thrown at the cat. By him, not me!

nons are quite nice with a bit of salad on the side, I cook them often
