Salads help please

I am doing salads for a 30th so need enough for about 60 people
I need a well liked, basic but yummy Lettuce salad, Potato salad, Pasta salad and coleslaw. All need to have ingredients that most people like, are not to expensive, I don't mind how long to prep them as long as they are a winner! :o) Please include how many you think it would serve as these will be served with chicken nibbles, sausages, pastries, BBQ meat etc. Your opinion please TYIA :o)

Banana salad

Main meal
Slice very ripe bananas, toss in a little lemon,juice. throw in a handful or two coconut ribbons. [ usually a bulk food product.]
Dress with sour cream, loosened with milk.

Dessert
If any over from the main add pineapple pieces, marshmallow's, a bit of juice from the pineapple.

Dress with yogurt, for a lighter option.

Bean salad#############Dressing

I buy cans of cooked beans for this.
I try and keep 2 cans in the fridge, all the time.
Dressing.Simmer, 1 1/4 cups of malt vinegar,
1/2 cup of brown sugar,
1/2 cup of water,
1 Tbsp honey,
1 Tbsp oil,
1 1/2 tsp salt,
2 tsp soy sauce,
pepper to taste.
cool.
Pour over drained beans, try and leave the salad in the fridge a while before using.

whole egg mayonnaise

1 whole egg
juice of 1 lemon
1 teaspoon whole grain mustard
1/2 teaspoon salt
1/4 teaspoon ground black pepper
150 mils of sunflower oil
150 mils of canola oil
You will need a stick blender and a tall beaker to make this mayonnaise.
Put the egg into the beaker first
Put the other ingredients carefully on top of the egg, so as not to disturb the egg.
Lower the stick blender in to the bottom without disturbing the ingredients.
Pulse the blender, until the ingredients start to emulsify, tilt the blender to allow the oil to be incorporated.

I postedto get opinions on what everyone else eats so that I'm not just catering for myself. I have a few Ideas from here however I wanted to see what others prefer. Thanks :o)

Seafood sauce
1 cup of mayonnaise
1 tablespoon of tomato sauce
3 drops of Tabasco sauce
1/2 a cup of whipped cream, lightly folded in.
Chill
OR
Tar-tare sauce
1 cup of mayonnaise
1 tablespoon capers chopped;
1 tablespoon of gherkins chopped,
1 tablespoon of parsley chopped.
Chill

Both of those dressings are nice using rice, with shrimp, seafood mix, surimi, etc

This is a lovely salad, you could double or treble the quantities. These guidelines are as a meal serving rather than a side dish.

Lunch box Pasta salad

150gms pasta bows
12 cherry tomatoes (or 4 tomatoes quartered)
1 green capsicum seeded, cored and diced
100g cheddar cheese cut in small cubes.
1/2 cup toasted pine nuts (optional)

Cook pasta in boiling wateruntil el dente (*firm to the bite, approx 7-9 mins*)
Drain into a sieve and cool under cold running
water.

Combine all ingredients in a large bowl.

Pour dressing over the top and toss to combine.

Serves 4. (generously)

Dressing

2 TBSPS salad oil
2 TBSPS white wine vinegar
2 TBSPSfreshly squeezed orange juice
1 TBSPS chopped parsley
Salt and freshly ground black pepper to season

Place ingredients in a screw top jar and shake
vigorously.

You can make a salad from anything cooked and chilled if you like. The bean salad is very nice made a few days before its needed. Beetroot can be done ahead of time, you could even bottle some and have it on hand. I like to have one or two salads up my sleeve, easy as to put together.
Look at a fruit in season, add red onion, capsicum, go for it. Lemon juice and zest to dress it. good luck , enjoy

I like lettuce salads with say, sliced almonds and dried fruits and seeds -like pumpkin seeds in it. mmMmm

Another simple one, but really looks pretty and effective when plated:
*Orange and Radish salad*
4 oranges, peeled and pithedand segmented.
1 bunch radishes thinly sliced.
2 telegraph cucumbers, cut into thin ribbons (with a wide peeler)
1 small red onion, thinly sliced.
Cut the peel and pith from the oranges, then using a small sharp knife cut between the membrane and the flesh to release the segments. Combine all ingredients into a large bowl.
Dressing:
2 TBSP orange juice
1 TBSP orange flower water
pinch salt, pinch sugar
Whisk all ingredients together. Pour over salad and toss.
Salad should be refrigerated for at least 40 mins - 1 hour before serving.
Recipe serves 8 as a side helping (generously)
Note:
Orange flower water is sometimes hard to come by. I have used a thin orange juice mayo or dressing as in the pasta recipe, it is just as tasty.

Egg Salad

Hard boil as many eggs as you need
Shell and cut into 1/4's
Put into a bowl along with chunks of celery
Dress with sour cream loosened with milk
Season with salt and pepper.
Cover, chill well.

You could use yogurt dressing if you wish
Remember to keep egg salad covered at all times.
