Easy and quick salads

We are having a new years BBQ and I am wanting easy and quick salads I can do to go with. Any ideas? Thanks

blanched cauliflower and broccolli florets and toss in mint sauce

Chickpea & Parsley
400g can chickpeas, drained and rinsed
½ red onion, cut into thin slices
¼ cucumber, halved lengthways and sliced diagonally
1 small bunch flat-leaf parsley, roughly chopped
100g feta, crumbled
1 small handful basil leaves, shredded
2 Tbsp red wine vinegar
3 Tbsp extra virgin olive oil
Mix the vinegar & oil together for the dressing and season well.
Add all but the feta to a bowl, stir gently to mix together then dress with the dressing. Add feta and stir lightly to coat with the dressing.
I sometimes add a can of white beans to the mix. Quick & delicious.

Cauliflower salad
Blanched flowerettes of cauliflower..
1 small carton Natural Yoghurt and equal quantity of mayonnaise mixed well.
Sprinkle over 2 or 3 chopped spring onions.

Carrot salad (I halve this recipe)

1kg carrots - sliced and cooked in unsalted water. Drain.
1 onion - finely chopped.
1 Green pepper or 1 stalk of celery.
Add onion and chopped pepper or celery to carrots.
Dressing:
1 225g tin tomato soup
1/2 cup oil
1 tspn salt
1/2 cup sugar
1/2 cup white vinegar
Pepper.
Place all ingredients in a saucepan and heat until sugar is dissolved. Pour over carrots and refrigerate. Serve cold.

Another favourite of ours is a Beetroot Salad.

I use a can of beetroot.
Drain juice from can - make up to 1 cup with water. Bring to boil.
Add this to a pkt of jelly crystals (Red currant jelly or Boysenberry).
Add 3/4 cup of vinegar. Pour over beetroot slices and leave to cool. Delicious.

Apple Salad... 2X red apples, 2X green apples, 1 orange.
Chop fruit into bite sized pieces and pour over some Natural Sweetened Yoghurt as a dressing. Delicious and refreshing.Can be served as dessert or with other salads.

Tomato/Cucumber/Onion
Slice as much of each as desired,put in bowl,add quarter to half cup vinegar,cup sugar and 2 to 3 cups of boiling water,taste and adjustrequired taste.yummmmmmmmmm

strawberry & tomatos cut into quarters and then pour over a reduced balsamic vinegar & homey mixture which has cooled after reducing, very nice but need to be refrigerated fror at least an hour to give it max flavour
