Jelly sponge

Any hints for making the jelly for one and how to trasfer jelly to sponge.Thanks

My mother was a great jelly sponge maker and they were always my birthday cakes.From memory she used half the usual volume of water, set it in a sponge tim the same size as she used to make the cake.When the sponge was cooll she dipped the jelly pan into a sink of hot water very quickly - just lowered it in then removed straight away - and inverted it onto the sponge.Worked perfectly every time.

Jelly sponge

Ingredients1 1/2 cups boiling water
85g packet strawberry jelly crystals,
300ml cream.
1 tablespoon icing sugar ,
1 teaspoon vanilla ,
1 x 18cm fresh, unfilled double sponge ,
2 tablespoons icing sugar, for dusting
. Method
Pour boiling water into a bowl.
Add jelly crystals and stir until dissolved.
Wet an 18cm round cake pan.
Pour jelly into pan and place in refrigerator to set.
Beat cream, icing sugar and vanilla until thick.
Run a flat-bladed knife around the edge of the jelly to release it from the pan.
Place the base of the sponge cake over jelly in cake pan.
Place a serving plate over the cake pan and invert so the cake and jelly are on the plate.
Spoon cream onto jelly.
Top with remaining sponge cake and dust with icing sugar.

Add citric acid to jelly. Brings out the flavour especially Raspberry

Don't use quite as much water in the jelly mix, cut it dowm by a few mls, to get a firmer set. pam. delialh's method is good.

1/4 - 1/2tsp, more if you are making more than 1 jelly.

Jelly sponge
2 x 20cm fresh, unfilled sponge cakes

1 cup boiling water
85g packet jelly crystals (raspberry or strawberry)

300ml cream
1 tbsp icing sugar

2 tbsp icing sugar, for dusting

Pour jelly crystals into boiling water in a heatproof jug, and stir until dissolved, cool. Wet a 20cm round cake pan, one of the ones used to bake the sponge in. Pour jelly into pan and place in refrigerator to set.

Beat cream and icing sugar until thick.

Run a flat-bladed knife around the edge of the jelly to release it from the pan (or semi-immerse in hot water).
Place the base of the sponge cake over jelly in cake pan. Place a serving plate over the cake pan and invert so the cake and jelly are on the plate.

Spoon cream onto jelly. Top with remaining sponge cake and dust with icing sugar.
