Try this one skata, our favourite! Cajan meatloaf • 2 Whole bay leaves • 1 T salt • 1 t cayenne pepper • 1 t black pepper • 1/2 t ground cumin • 1/2 t ground nutmeg • 4 T butter • 1 C finely chopped onion • 1/2 C f celery finely chopped • 1/2 C finely chopped bell pepper • 1/4 C chopped spring onions • 2 t of minced garlic • 1 T tabasco sauce • 1 T worcestershire sauce • 1/2 C milk • ½ C tomato sauce • 2 packets sausage meat • 2 eggs lighthy beaten • 1 cup very fine dry bread crumbs
Cooking Instructions Combine bay leaves, salt, cayenne, black pepper, cumin and nutmeg in small bowl and set aside. Melt butter in pan and add onions, celery, bell pepper, spring onions and garlic and cook until soft. Add Tabasco, Worcestershire and seasoning mix, cook a further 2 minutes then add milk and tomato sauce and cook for another 2 minutes then remove from heat. Put sausage meat in large bowl and add eggs,breadcrumbs and cooked spice/vege mixture. Place into greased loaf tin and cook for 1hr at 180 C. Serve warm or cold with a green salad.

i did an easy one the other nite everyone loved it 500gm mince 500gm sausage meat i onion 2 tbsp chilli sauce 2tbsp tomatoe sauce we use tuimata i egg breadcrumbs to mix salt and pepper mixed veges optional grated cheese and slice tomatoe on top
mix all together place in dish i just used a cassarole dish as sisnt have a loaf tin cooked at 180 C for 1 to 2 hours i just kept checking it not really sure how long it was in the oven for was yummy hot and hubby had in sandwhiches for work cold said it was still yummy the chilli sauce just gives it a bit of zing

Thank you, they both sound very tasty.Might have to leave out the tabasco/chilli sauce though due to fussy teen.

Check out the Alison Holst recipes, (from the best of Alison Holst cookbook) she has several on there, especially nice is her confetti meatloaf roll, which can be made in the microwave as well. If you can't find it I will try to post it later. sorry typing is appalling today.

i'm having meatloaf tonight. This is my receipe 1lb sausage meat -1lb mince 1 cup breadcrumbs -1/2 cup milk 1/2 cup water-2 onions 2tsp curry pdr-pepper&salt 1 egg combine, make into log (or meatballs) bake at 180 for 30 minutes BBQ Sauce 1/2 cup cold water-1/2 cup tom sauce 1/4 black sauce-1/4 tsp instant coffee 1oz butter-2tsp lemon juice 2Tbs vinegar-1/2 sugar Bring to boil, simmer ror 5 minutes and pour over loaf at the 30min mark then bake for further 45min. i dont measure or use exact science with my meat weights
