LEMON COONUT SLICE – 1 cup flour, 2 tsp BP, 1 cup coconut, 1/2 cup brown sugar, 1/2 - 3/4 cup melted butter. Mix dry ingred, add melted butter and stir till 'clumpy', push into sponge roll tin. Cook 15 mins 180oC till nice and golden brown. Cool, ice with lemon icing - that's it!

Hi 1x4000 . do the slice recipes work with oil instead of butter! The OP needs recipes that are dairy-free but I'm asking as a friend of mine is dairy-free and always looking for new recipes.

1x4000 Thanks for your advice ,unfortunately marg etc is full of soy and milk products and I hate to say it lots of nasty ingredients too. the rice bran oil is ok in cooking and baking.

you can replaceegg with a tablespoon of golden syrup (per egg) in baking, with swapping butter/marg with oil I have no idea!

try these with golden syrup instead of egg . . . .
Feijoa loaf/cake 6-8 large feijoas 50g/2oz butter 1 cup boiling water 1 beaten egg 2 Cup flour 1 teaspoon Baking Soda 1 cup sugar 1 teaspoon Baking Powder
Boil feijoas, water and butter for 5 mins. Cool. Carefully stir in sifted dry ingredients and beaten egg. Cook for 45-60 mins at 180c Sultanas (boil with feijoas), walnuts can also be added. Ice if you wish with lemon icing Rub soft butter into icing sugar till it looks crumbly. Add lemon juice (zest too if wished) Beat for 5-10 mins with electric beater. Ice. Zest can be added on top.

Ginger Loaf 50g Butter 3 Tspn Golden Syrup 1/2 C Sugar 1/2 C Boiling Water 1 Egg 2 tspn Ginger 1/4 tspn BS 1/2 tspn BP 1 C Flour Place butter, sugar, golden syrup and boiling water in a bowl and stir until melted. Add egg and whisk briskly (I let it cool down a bit first!) Add dry and mix. Place in loaf tin. 30 mins approx at 180 If you love ginger, add some chopped crystallized ginger. Great with chopped apple and or sultanas also.

Basic Muffin Mix Bowl 1 4 tsp BP 2 C flour 3/4 C Sugar Bowl 2 1/2 C Oil 1 C Milk 1 egg Add bowl 1 to bowl 2. Just mix. 200 for approx 15 mins Add cocoa, friut etc as you wish:)

PORRIDGE MUFFINS BOWL 1 1/2 C Oil 1 Grated Apple 2 Eggs 1 C Cooked Porridge 1/2 C Sultanas 1/2 C Coconut 1 tspn Van Ess Mix till no lumps. BOWL 2 1 C Flour 2/3 C Brown Sugar 1 tspn BP 1 tspn BS 1 tspn Cinnamon Mix well. Add Bowl 2 to bowl 1 and just mix. Spoon into muffin tins. Bake 15 mins at 180
CHOCOLATE CRACKLES 250g icing sugar (sifted), 3 tbsp cocoa, 1 cup coconut, 4 cups rice bubbles, 250g Kremelta. Melt the Kremelta over a gentle heat and meanwhile combine the icing sugar, cocoa, coconut and rice bubbles. Add the Kremelta and mix thoroughly, then spoon into paper cake containers and allow to set. :-))

Honey crackles
125g butter, 2 Tbs Honey, 125g Sugar, 1 tsp vanilla essence, 4 cups rice bubbles. Place butter, sugar and honey in a large saucepan and boil for 3 mins. Stir in vanilla and rice bubbles. Mix and press into a slice tin. Cut while warm, leave to set.

Spoon into muffin trays. Bake 20 mins at 200 You can add spices, dried fruits etc or even chopped apple, pears to this.
My granddaughter is allergic to eggs so I would like the éggless' recipes to keep coming .....please
