Yes, roast carrots are aces. We add a touch of honey right at the end.
Another one - and, to me, slightly weird - is roasted cauliflower. Make up a spice mix/paste and toss raw cauliflower in it and put in the oven for 30mins. It sounds odd, but works.

I roast them if Im having roasties in the oven, spuds, kumaras, carrots, pumpkin, onions, beetroot. Yummy.

Roasting carrots really brings out the flavour. I toss them in olive oil and Masterfoods Italian seasoning.
