The best Egg & Avocado Toast recipe 🥑
Is the perfect recipe to make when you do not have a lot of time to cook but still looking for something healthy, tasty and nutritious.
This toast is packed with healthy fats, proteins, nutrient dense and it is made in less than 10 minutes. Can be enjoyed for breakfast, lunch or even dinner.
Ingredients (makes 2):
▪️2 eggs, hard boiled
▪️ 1 ripe avocado
▪️ 1 tablespoon yoghurt
▪️ 1 celery stalk, finely chopped
▪️ 1 shallot, finely chopped
▪️ 1 tablespoon fresh dill, finely chopped
▪️ 1 tablespoon fresh parsley, finely chopped
▪️ juice from half lemon
▪️ salt and pepper, to taste
Instructions:
1. Add all the ingredients and mash them with a fork.
2. Spread mixture over toast and sprinkle with mixed seeds, chilli flakes, fresh parsley and a drizzle of extra virgin olive oil. Enjoy!
