Zucchini, Pea, and Ricotta Salad

This fresh and vibrant Zucchini, Pea, and Ricotta Salad is perfect for a light and healthy meal. The combination of grilled zucchini, sweet peas, creamy ricotta, and fresh basil creates a deliciously satisfying dish that's easy to prepare.

▪️ 2 medium zucchinis, sliced
▪️ 1 cup fresh or frozen peas
▪️ 1 cup ricotta cheese
▪️ 1/4 cup fresh basil leaves
▪️ 2 tablespoons olive oil
▪️ Salt and pepper to taste

1. Heat olive oil in a large skillet over medium heat. Add the sliced zucchini and cook until golden brown on both sides.
2. While the zucchini is cooking, blanch the peas in boiling water for 2-3 minutes if using fresh, or thaw if using frozen. Drain and set aside.
