I made this tonight using blackboy peaches & it was yum.Free Form tart. Pastry -2 Cups Plain Flour, 157g butter, 2 T Caster Sugar, 3T Water. Rub butter into flour, add caster sugar & water mix until combined.Filling 1 Large tin 840g or the equivalent cooked fruit, 2T Cornflour, 2 T Honey- mix together. (Can add 1 sliced banana if liked) Roll pastry out on a baking tray to 5mm thick leave edges rough, pile fruit mixture into the middle, fold edges of pastry in to encase the fruit leaving some fruit in the middle exposed, place in the oven higher than middle shelf & bake at 200 C for 30-35mins. Serve with whipped cream
