Here you go :-)
Ginger Crunch (GF)

Ingredients:
250g butter
250 g sugar
400 g gluten free flour
2 tbsp ground ginger
2 tsp gluten free baking powder
4 tbsp preserved ginger - finely chopped
For the icing:
100gms Butter
180gmsicing sugar (GF)
4 tbsp golden syrup
4 tsp ground ginger
Directions:
Pre set oven to 180 degrees Celsius.
Cream butter and sugar, then add sifted dry ingredients, beat well until mixed, add chopped ginger ,then use hands to knead it into a ball.
Press into greased shallow tin (31cms x 20cms)
Bake 20 mins. Allow to cool & settle then:
For icing:
Into a pot add butter, icing sugar golden syrup and ground ginger.
Heat until melted then pour over hot slice.Place in fridge.
Cut into squares before it gets too cold.

Has anyone tried Laucke gluten free bread made from a mix.You can get it from Bin Inn, is $9.95 a pkt which makes 2 loaves and is by far the best gluten free bread around.Easy to make and keeps fresh for days.

Hi Boots,is is LSA,linseed,sesame and almond.
It is a mixture you buy at the supermarket,or you can grind them yourself.

LSA is linseed(flaxseed) sunflower seeds and almonds ground to a meal.
It is available at most supermarkets in the specialist or flour section.
I buy it at Bin Inn.

I am not experienced enough with GF baking to recommend a substitute,but with only 3 tbsps required you could try any combination of seeds and nuts.
It's a matter of working out how absorpant the meal is, so that you get the quantity of fluids correct.

I have made this loaf and found it to be very dense.I slice it like bread and I don't think I could have eaten the whole thing like a burger bun.

Bumping this up & also to say I went to a wonderful GF Cooking Class in Pukekohe Auckland on Sat. They do classes Tauranga to Whangarei.
5 hrs of wonderful cooking, eating, sharing hints & you get to eat the yummy breads,scones, pasta etc that they make. Highly recommend the classes.

Hi.
I might have an easy bread recipe to post.
I have been fiddling with the 'no knead' bread in Recipes.
Is ok, but needs a little tweaking.
Cheap and easy.

So pleased with this recipe- it's a fast and tasty little marvel!
I used one and a half times the amount of dry ingredients, as initially it was too "eggy" for me.Also added 1 tsp caraway seeds and a little mixed spice to make a sweet bun.Cooked it in two smaller batches.
Will try a savoury version sometime.Fantastic little recipe.
Much gratitude to the inventor.

Hello.Are there any GF bread recipes that can be made in a bread maker!I have just started trying out GF due to bowel issues and just found this thread.Looks really informative with what I have read thus far.What a great idea!

Sandwich Bread Recipe 2 tsp yeast
1 tsp sugar
1/2 cup water
Add the yeast and sugar to 1/2 cup warm water and leave 5-15 minutes in a warm place until frothy.
In a bowl put the following
3 cups bakels 100% GF Bread Mix
1 tsp guar gum
1 Tbsp milk powder
1 cup water
1 tsp white vinegar
1 tbsp oil
Add yeast mixture and mix well.
Put in breadmaker and bake on basic loaf for 3 hours

also there is another one called Natalies brown bread.
Dr fords has it in one of his books.
