Try making Muffins using Freedom GF Chocolate Chip Muffin Mix and add 1 cup frozen raspberries to it. When cooked sprinkle with GF Icing Sugar. Yummmmm! You won't be disappointed!

This recipe is so delicious I thought Id post it in here (its also in the thread titled: *Gluten Free Hints and Tips* posted by winnie): Pina colada ice-cream:
1/2 pineapple
1/2 fresh banana
1/4 cup coconut cream

Preapre pineapple at least 8 hrs in advace, remove skin and tough core, chop flesh into bite-sized pieces and freeze.
Put banana and coconut cream in a food processor or strong blender.
Blend until smooth.
With food processor still running, gradually add frozen pineapple pieces, then blend until mixure is smooth.
Spoon into 4 small bowls and eat immediately.

Serves 4.Because it makes quite a lot, and as pineapple is quite fibrous,I take it out of the freezer, measure out what I want and put the rest back in the freezer.It lasted doing this 3 times (hubby had some too) and is so yummy. :)

Gluten free Banana Cake:
3 eggs
250 gm olivani dairy free spread melted
1 cup sugar
Grated rind of 1 lemon
4 ripe bananas mashed
1 tsp Baking soda dissolved in a bit of warm milk
2½ cups Bakels Gluten Free flour
5 tsps GF baking powder

Mash bananas. Add the eggs and stir with a wooden spoon.
Add sugar and then flour. Add melted marg and stir until all combined.
Preheat oven to 200C then lower it to 160C when you put in the cake.
Bake 1 hr 20 minutes. :)

Melford - can you tell me which supermarkets in ChCh stock Freedom choc chip muffin mix pleased - your recipe suggestion sounds great.
For those interested I believe Fresh Choice Merivale is stocking Lievito bread now.It is really good.They also make French bread sticks which are excellent - taste just like the real thing.Dont know if FC have those but Lievito courier to ChCh and they freeze well.

My apologies. The brand is Freefrom (not Freedom). Freefrom is a Brand put out by Countdown or Woolworths. I need to wear my glasses lol

Try this easy dessert to have with fruit.
Easy Dessert
1 can Carnation Evaporated Milk (It is gluten free Chilled overnight or at least 4 hours)
1 Greggs Raspberry Jelly (its gluten free)
Make up jelly with 1 cup boiling water and when set to the consistency of a runny eggwhite beat up a can of evaporated milk until thick. Now beat in Jelly and let set about 1/2 hour.

Melfords Breadmaker Bread .Make up the bread mix first. 4 cups white rice flour, 1 ½ cups potato flour, 2/3rd cup tapioca flour(Recipe says it makes 4 loaves but it makes a very small loaf so I one and a half times the recipe that follows and cook for the same time). One loaf : 2 cups gluten free mix, 2 tbsp sugar, 2 tsp xanthan gum, 1 tsp salt, 1 ½ tsp active dry yeast, 1 cup lukewarm milk or milk alternative, 2 tbsp oil, 2 eggs, or 4 tsp egg replacer and ¼ cup water and 1 tbsp linseeds, 1 tsp cider vinegar.
Sift dry ingredients and add yeast Blend milk oil eggs or egg replacer, vinegar. Add to dry ingredients mix to combine. Press into bread pan. Close lid bake following instructions for a white loaf(about 3 hours) Cut when cold freeze in slices unless going to eat. Do not double recipe as it overflows pan only use one and a half times the mix for a 1kg loaf

Hi, I've been a lurker in the gluten free threads for a while - since the TTG came back indicating quite strongly that my little girl is coeliac in fact.

She's going under a general for a biopsy and endoscopy on Friday, - she's four - to ascertain whether she is in fact coeliac.

Sorry, this is a bit rude no doubt.

But what upsets me is that something that is a rather painful reality is becoming a political minefield.

I have a friend with a little girl who has one of the highest TTG indicators that either Rodney Ford or Mr Ding had ever seen - and she is a great source of information for what items her daughter can use as being non-gluten.It's really interesting, she's found Signature Range, and Pams etc, to be really good for it in many ingredients.

I am joining this thread too.as i have a 3.5 yr old that i suggest is gluten intolerant.at the moment we are also lactose free.off to the dr to get allergy tests done.will be back in a few days.
