tasted some realy yummy light texture muffins the other day, and the elderly lady, (who just tosses the ingredients in the bowl), said she used oil in them. Has anyone a good recipe, or how do you substitue oil for butter

All of the recipes in Alison and Simon Holst's Book "Healthy Muffins"use oil rather than butter.
Unfortunately ny copy is buried somewher inder a bookcase.

Basic Muffin Mix
Bowl 1 4 tsp BP 2 C flour 3/4 C Sugar
Bowl 2 1/2 C Oil 1 C Milk 1 egg
Add bowl 1 to bowl 2. Just mix. 200 for approx 15 mins
Add cocoa, friut etc as you wish:)

I make all my muffins with oil rather than butter. I use 1/4 cup oil for every 50 grams butter (and probably should add a pinch of salt but I usually don't)

I heard that if you use oil they keep longer. I know this is the case with bread. I either use oil or yoghurt in my muffins

no oil or butter in these and they are very nice!
Fibre Muffins BOWL 1 1/2 C Sugar 1 Tbspn BP 11/4 C Flour Mix. BOWL 2 2 C All Bran 1 1/4 Skim Milk/Milk Stand 5 mins
add to bowl 2 1/2 C Apple Sauce 1 Egg Mix.
Add bowl 1 to bowl 2 and just mix. Spoon into muffin trays.
Bake 20 mins at 200
You can add spices, dried fruits etc or even chopped apple, pears to this.

PORRIDGE MUFFINS
BOWL 1
1/2 C Oil 1 Grated Apple 2 Eggs 1 C Cooked Porridge 1/2 C Sultanas 1/2 C Coconut 1 tspn Van Ess
Mix till no lumps.
BOWL 2
1 C Flour 2/3 C Brown Sugar 1 tspn BP 1 tspn BS 1 tspn Cinnamon
Mix well.
Add Bowl 2 to bowl 1 and just mix. Spoon into muffin tins.
Bake 15 mins at 180
Make a bit extra porridge in the mornings to make these!!
