No we never got a recipe unfortunately. All we have are some of the old factory sauce and pickle bottles

The last lot of this sauce I made, I bought the treacle and spices from Bin Inn, I used my own vinegar. It took me ages to get it right. I will be going in to the store and sorting out an issue with! treacle. It , the sauce, tasted burnt looked way darker. Just wonder if any one else has an explanation. Could it be a case of wrong ticketing, treacle and molasses swap, maybe.
I did get it right, took a lot of extra ingredients. I will be buying the ingredients from the supermarket next time, the savings , from buying at Bin Inn, were taken care of, in power and the extra ingredients in the end.

As malt vinegar contains gluten do you think this would work with another vinegar, say cider vinegar for instance.

Should be fine. frances1266. I have made this using my peach vinegar, it was nice. I make the recipe as written but then add other bits to give it more grunt.

The last lot I made I gave a few bottles away and it has got very hot, lol. Told them it was "hot sauce" and that it will keep developing, It has got hotter than even I could have imagined.

######### Pickles Worcestershire sauce###########

Finished recipe.9 X 750 mil bottles.

8 liters of malt vinegar ,
25 grams of whole cloves
2 kg apples ,
2 oranges ,
2 lemons ,
500 grams of garlic ,
500 grams of fresh ginger ,
110 grams of tamarind puree ,
1 near rotten banana ,
500 grams of molasses ,
25 grams of gr. black pepper ,
3 tsp cayenne pepper ,
1 kg brown sugar ,
225 grams of sea salt.
Simmer for three hours , strain through a sieve , then hang the pulp in a cotton cloth to extract all the sauce.watch for fruit flies.
Bottle , cork , and store in a cool place.
near rotten banana was only put in because it was sitting on my bench.

Nothing .tastes like Lea and Perrins.worth the money spent.
Do you really want to go thru that process and spend all the money on that lot and then add the banana. .Phew.!

I thought anchovies were important!I'm with Fisher, can't go past Lea and Perrins and like him I do make quite a variety of sauces.

Have you tasted Lea and Perrins recently!
You don't have 9 wine bottles of Worcestershire sauce then do you.
It is very much worth while making this recipe.
I am proud to say this recipe won't taste the same, it tastes more like Lea and Perrins, used to taste like.Darned good.

Nup .not convinced. Lea and Perrins is still the same. thanks.maybe your taste buds have gone array especially since you would add a banana.!
9 wine bottles. yeessus.and all with banana.why would I want 9 bottles of it.!work out the costs of your ingredients you have listed plus the time and power expended and I'll stick to Lea and Perrins tried and trusted straight off the shelf. thanks.

Here is another similar sauce recipe .scottdaddy.just as good as each other but in there own, flavours. A smaller recipe.

"Tamarind sauce"

2 liters of malt vinegar ,
110 grams of tamarind pulp ,
1 Tbsp of sea salt ,
1 cup of brown sugar ,
700 grams onions ,
10 grams of whole pickling spice ,
1/4 tsp mace ,
2 whole chili peppers ,
1 tsp each whole black pepper corns and
1 tsp curry powder.
Simmer all together for 1 hour, strain,
bottle ,
cork and mature.
Has a Citrus flavour.[ tamarind]
This did turn out very well.
I could very well be tempted to make this again.
Both my Husband, and lover, enjoy this sauce.

how much is a bottle of the sauce now!
Binn Inn sells bulk vinegar. I make my own, costs me 50 cents a litre, less if I score a bottle of home brew. My husband made a lot of beer he didn't like, It made darned good vinegar. lol.
Yes the out lay can get up there. but in the long run you do get the quantity. You could use the above recipe and omit the tamarind, add 2 lemons skin and all.

HOMEMADE WORCESTERSHIRE SAUCE
3 cups brown vinegar
½ cup each of treacle and plum jam
1 small onion, chopped
1 garlic clove, crushed
¼ tsp each of cayenne pepper, chilli powder and ground cloves
1 tsp ground allspice

Combine all the ingredients in a large saucepan. Stir over heat until the mixture boils. Simmer, uncovered, for 1 hour, stirring occasionally. Strain the mixture into hot sterilised jars and seal when cold.
Makes about 2 cups. :-))

This one was put up by Cookessentials.seems a bit more cost effective :}
and can be made fresh when needed.Still like Lea and Perrins tho.

Do they still sell it!.elliehen. It used to cost the same as buying the D.Y.C. white vinegar. I too, looked into making my own white vinegar years back.

It has turned out to be very insipid, Not bad, but definitely needing a ,"pickles" tweak.
Fine if you want to rustle up a bland sauce, lacking in heat.
I have at least made. cooks. recipe.
Positive criticism, is all good.
It sure is a great place to start, making sauce. I will say to anyone trying the recipe, on adding more spices, go easy, it is not a lot of sauce, not much to come and go on. I won't put up, what more I had to add.
I challenge you fisher, make up this recipe, as its printed, and come back

I am up to trying the other recipe as well but may be, not today.

what can I say. fisher you and many others like to put down the work of others, I never post a recipe that I personally have not made, and am happy with, mine, or someone else's, without saying I have not tried, the said recipe.
Why not try being a little more productive.try the recipe you put down, of someone else's, be fare, you wouldn't have posted that, one.

Well done.robman7.I made this today. It is a bit on the sweet side, nice and spicy though. I may make up a bulk lot of sauce using this recipe, omiting the treacle in two out of six times the recipe. It takes no more power to make six times the recipe, than just one lot.
