Vegetarian Stuffed Peppers

Does anyone know where I can find a recipe for stuffed peppers filled with rice and not meat?Thanks in advance.

American recipes with tomatoes and eggs.

I use this recipe

Capsicum(medium) - 5 nos
Onions(large) - 2 nos
(sliced thinly)
Mushroom about a hand full of button(medium) (chopped fine)
Garam masala - 1 tsp
Tomato sauce - 2 tbsp
Soya sauce - 1 tbsp
Pepper - 2 - 3 tsp
Salt - As reqd
Oil - 2 - 3 tbsp

1)Wash all 5 capsicums.

2)Slice one thinly and keep aside.

3)Heat a little oil in a pan.

4)Add onions and saute, till golden brown.

5)Add the sliced capsicum and saute.

6)Add the garam masala and pepper and saute well, till the raw smell of the masala goes.

7)Add the tomato sauce and soya sauce to it.

8)Add mushrooms and and some recotta if you like(optional) and saute well on a low flame.

9)Add salt.

10)Remove from fire.

11)Preheat the oven at around 175 degrees.

12)Carefully, slice the tops of the remaining 4 capsicums and remove the seed inside.

I also use this filling mix in pastry to make a vegetarian version of a sausage well and they are very popular.

13)Stuff them with the filling.

14)Carefully, replace the tops of the capsicum.

15)Bake for 15 - 20 mins at 200 degrees

capsicums (colour of your choice)
rice or couscous, cooked
feta cheese
tomatoes, chopped
parsley, chopped
basil, chopped

Preheat the oven to 180°C.

Cut the tops off the capsicums. Combine all other ingredients (being generous with the herbs) and stuff firmly into the capsicums.

Cook for 15-20 minutes, taking care not to blister the capsicum skins.
