does anyone have a recipe that is gluten free and has anyone tried it with soy milk?

My favourite is with coconut milk instead of any dairy, and you could easily use a GF baking mix: http://www.mrscake.co.nz/2010/10/banana-coconut-loaf.html (I seriously loooove this loaf - of course if you're not a coconut fan you might not so much!)

Banana Bread (Aunt Daisy)
1c sugar
2 eggs
1tsp b/powder
3 mashed bananas
1/2c butter
1&3/4c flour
1tsp b/soda
Cream butter & sugar, add eggs, flour, b/powder & b/soda, lastly bananas.
Bake in a slow oven..
