Ginger Walnut Slice - previously posted on TM by cookessentials

2 cups sugar; 1/4 tin condensed milk; 1 tablespoon golden syrup;
1/2 cup milk; 250 g butter; 1/2 cup chopped walnuts;
1/2 teaspoon vanilla essence; 1 cup desiccated coconut;
1 packet gingernuts, crushed

Melt together sugar, condensed milk, golden syrup, milk and butter.
Bring to the boil and gently cook for 8 minutes.
Remove from heat and beat until thick.
Add walnuts, vanilla, coconut and crushed biscuits - mix well.
Press into sponge roll pan and sprinkle with coconut.
Refrigerate until set and cut into pieces.
(lovely and not too sweet)

Apricot Slice 1pkt wine biscuits crushed, 15g butter, 1 1/4t gelatine, 1c Hot h2o, 1/2c sugar, juice 1 small lemon, 1 lge pot apricot yoghurt (or what ever flavour you would prefer). Mix butter and biscuits and press into dish. Dissolve gelatine into h2o. Add sugar to dissolve. Mix in yoghurt and lemon. Pour onto base to set in fridge. Cut up and enjoy once set.

CITRUS SLICE

100 g Butter3/4 Cup Sweetened condensed milk
1 Cup coconutGrated rind of orange
1 Packet Super wine biscuits.

ICING

1 Cup icing sugar2 Tablespoons butter
Juice from orange

Melt butter, add condensed milk, coconut, finely grated orange & crushed biscuit crumbs.
Mix well, then press into slice tin.
Mix icing sugar with butter then add juice a little at a time until it isready to spread.
Spread with a knife and refrigerate until firm.
Slice eat and enjoy. I have made this In Lemon to, this slice never last's in this house. lol
