Peanut Brownies?

I need a really good recipe for peanut brownies hubbys nana used to use mutton fat in hers not keen on that but he claims they were the best peanut brownies ever need a recipe to compete with nanas:)

Peanut browniesbiscuits.

125g Softened Butter
1 cup of White Sugar
1 Egg
1 1/2 cups of Flour
1 teaspoon of Baking Powder
Pinch of Salt
2tbs cocoa
1 cup of roasted peanuts

Method

Preheat oven to 180°C.
Cream butter and sugar until light and fluffy.
Add egg and beat well. Sift flour, baking powder, salt and cocoa together.
Mix into creamed mixture.
Add peanutsand mix well.
Roll tablespoonfuls of mixture into balls.
Place on greased trays, flatten with a fork.

Bake at 180°C for 15 minutes, or until cooked.
Makes 20 biscuits.

Here's a recipe from Sean Moran using duck fat.I haven't made it.

Chocolate Peanut Duck Fat Cookies

makes 33

¾ c flour
¼ tsp baking powder
½ tsp salt
¼ c duck fat (or lard or butter)
80g butter
¾ c brown sugar, firmly packed
2 tab caster sugar
1 vanilla bean
1 egg
2 tsp milk
1 c rolledoats
1 c unsalted peanuts
1 heaped cup chopped chocolate

heat oven to 160C.Line three baking trays.

Combine flour, bp, salt.In a mixing bowl beat fat and sugars plus seeds from vanilla pod.Cream until thick and pale.

Add egg and milk then beat in flour mixture and oats.Fold in peanuts and chocolate.

Make small cookies of a flat tab. each.Bake 15 min, cool on racks.

i always add 1 tbles coconut in my brownies, and warm the peanuts in m/wave as well.

Think the secret is heating the peanuts through before adding to the mixture. I put mine in the oven while it is heating up.

the muttom fat the granny used to use would have been kidney fat which is diffrent from the rest of the fat on a beast its like crumble butter with very little mutton taste ,it sits around the kidneys in a big hunk .ive used it in boiled puddings

Thanks whitehead that's really interesting I did roast the peanuts first but have to say it was such a pain taking all the skins off the peanuts!

put the roasted peanuts inbetween two tea towels and rub them, most of the skins fall off.

I roughly chop my roasted peanuts in the food processer and they go a lot further and do not fall out of the biscuit so easily.

I use the same recipe for sultana, dried fruit, eg apricot or chocolate crunchybiscuits.

Yes whitehead, I remember my nan used to make puddings like that. However I tried to replicate it usinga Nigella Lawson recipeusing todaysversion of Kiwi suet and OMG, it was dreadful! Suet these days is SO different. For peanut brownies I use the old Edmonds recipe, a good quality cocoa, andmake them with margarine. I buy budget blanched peanuts and lightly roast them, before adding to the mixture

I have so much trouble making PB since coming to Oz!
I have my faithful Edmonds cookbook but I think it's because the peanuts over here (like every other thing) are huge & they fall to pieces unless I take out half the peanuts ..the cocoa here sucks too but thankfully I have found nestles baking cocoa so they are no longer anemic looking blobs!

I will just have to remember to chop up the nuts first maybe that will work?

Buy the homebrand cocoa...usually in the aisle by the condensed milks etc.Not the baking aisle.

Have been making Peanut brownies every week for my Hubby he loves them. I roast peanuts first and put lots of peanuts in! It is such a easy recipe.
