Drumsticks

how do I stop the breadcrumbs sliding off when I cook the drumbsticks? I deskined and dipped them in egg then into breadcrumbs. rested them in the fridge for about 1 hour before putting them on a rack to bake but a lot of the crumbs slid off. What am I doing wrong? would like to cook them again for visitors tomorrow night. Any ideas would be much appreciated

Did you roll them in flour before dipping them in the egg? That might help.

the crumbs need a little moisture when cooking, I do mine (but I leave the skin on) much the same as you, but then I preheat oven with roasting tray in it with a little oil, then put the chicken peices in and turn so they take up some of the oil and then cook them.

i also recommend baking paper so chicken doesn't stick to tray
