can I make a crunchy healthy coating for chicken drums using weetbix anyone know! also, when coating them with something crispy do you leave the skin on or off! thanks

Not weetbix, but have crumbed chicken by dipping in plain yoghurt and then in finely crushed cornflakes. It is delicious, your choice regarding the skin.

I'd toss chicken skin on or off, in flour, then dip in beaten egg, and toss in the crushed weetbix, sit in fridge around 1/2 hour before baking.

agree! i sub weetbix in for cornflakes all the time, and i bet either would make a great crusting. I was told once that crushed up potato chips make a great chicken crusting too (apparently cheese and onion are the best flavour for it).

Crushed plain potato chips mixed with grated cheese, bake in oven.
