I want to make a head start with dinner tonight so would you serve this salad cold?
I wanted to roast the capsicum, tomatoes and onions now and have them ready to throw into the couscous later.

Yes definately, will be delicious as the cous cous will soak up all the flavour of the roast veggies if you do it in advance.
