I bought myself a bradley smoker for xmas and decided to make their Maui Ribs recipe, I followed their recipe and sadly it turned out a failure, the meat left a real nasty bitter after taste and even 4hrs afterwards the taste was still there. I have smoked fish many many times over the years but this was the 1st time trying red meat, does anyone know why this turned out like that?

I would have boiled the ribs before smoking...
