Smoked salmon ideas?

At the supermarket yesterday DF and I spotted some lovely smoked salmon slices set to clear! It is something we can never usually afford so I convinced DF to let me get 2 packets (they are 100g packets of cold smoked salmon slices).
I was so excited as they were down to $5 each (usually $10).

One of the conditions was that I had to turn one of the packets into something for dinner tonight. The other packet got eaten plain and on crackers with cream cheese (YUMMY)

How should i best use this delicious salmon?
Sadly I can't just eat it on crackers today

So far my only ideas are sushi but I am out of sushi rice and can't be bothered getting more.
Pizza could be possible? But I wouldn't know how?

warm a croissant, spread with cream cheese, sprinkle with chopped spring onions, a slice of tomato and fill with smoked salmon, Sprinkle a little lime juice onto the salmon for flavour and serve with a crunch salad.

Smoked Salmon on Potato Rosti

So simple but so delicious as a variation to serve your favourite smoked salmon

Ingredients
6 medium potatoes, Ilam Hardy are good
2 tablespoons oil
250g spreadable ( could be lite ) cream cheese
1 tablespoon chopped chives
1 tablespoon chopped parsley
1 tablespoon lemon juice
1/2 teaspoon grated lemon rind
salt & fresley ground black pepper
150g smoked salmon
4 teaspoons caviar or smoked salmon roe

Method
Peel & Grate the potatoes onto a clean tea towel. Squeeze out as much excess liquid as possible.

Heat oil in a frypan and, using a spatula, flatten piles of potato, cooking until golden brown and crisp. Drain on paper towels and keep warm as you cook each batch.

Mix cream cheese with the herbs, lemon and salt & freshly ground black pepper. To serve, layer rosti, cheese mixture and smoked salmon in a double stack on each plate garnished with a teaspoon of caviar.

The Rosti looks nice and simple :) minus the caiar lol
I was going to serve it in some sort of roll but we have already had burgers/sandwiches 3 times this week lol
