Vegetable Spring Rolls (Thai)
1 c bean sprouts 1 c mushrooms, finely chopped ½ spring onions/Chinese chives, finely chopped ½ tsp salt 4 cloves garlic, crushed 1 tab fish sauce ½ tsp sugar 1 c soaked bean thread noodles (chopped) pepper 1 egg, beaten Spring roll skins Oil for deep frying
Heat 2 tab oil, fry garlic 2 min, add sprouts, mushrooms, spring onions and noodles.Stir-fry 2 min.Add fish sauce, sugar, salt & pepper.Cool.
Place tsps in skins, roll up and seal with egg.
Deep fry 5 – 8 min.Drain.
Serve with chilli sauce.

Time & Serves Serves: Makes 25 Ingredients 300-400 g pork mince 500 grams cabbage, finely shredded (about half a small cabbage) 2 cups cooked rice 2 cups Wattie's Chuckwagon Corn 425g can Wattie's Oriental Plum Stir Fry Sauce 2-3 tbsp soy sauce 350g packet Spring Roll Pastry (25 sheets) 2 tbsps flour 4 tbsps water Measurement conversions
Main MealsThis recipe meets all the following criteria set by the Heart Foundation in their Recipe Development Guidelines for main meals: Total fat: No more than 10g /100g and no more than 20g/serveSaturated fat: If saturated fat is more than 6g/serve, then total fat is no more than 15g/serveSodium: No more than 450mg/100gPortion size of meat, fish or poultry is no more than 200g raw or 150g cookedThe whole meal contains a meat or alternative, a starch (root vegetable or grain), and vegetables or fruit. Method 1. Pan fry the pork mince in a dash of oil in a wok or frying pan until well browned, set aside.
2. Add a dash more oil to the pan and quickly pan fry the cooked rice and Wattie’s Chuckwagon Corn until hot. Stir in the pork, cabbage, Wattie’s Oriental Plum Stir Fry Sauce and soy sauce and toss until the cabbage has wilted. Cool.
3. Mix the flour and water to a paste. Place 2 large tablespoonfuls of mince mixture in the corner of a spring roll wrapper and roll over once to enclose the filling. Brush the edges with the flour paste and then fold in the sides of the wrapper and roll up securely. Place on a plate covered with a damp clean tea towel, while you prepare the remaining spring rolls.
4. Brush the spring rolls liberally with oil and place on a baking tray. Fan-bake at 200°C for 8-10 minutes until golden. Alternatively shallow fry in hot oil until golden and hot.
Serve with soy sauce for dipping
I just used beef mince as I didnt have pork.

What section on supermarket do you find the springroll wrappers? I've looked down rice & pasta Isle, the asian food isle & the freezers.

Not all supermarkets have them - normally in the asian etc cooking. I get ours from the asian shop - much cheaper.

These ones were a bit different... quite tasty...good cold in the picnic too.
