What are their purpose?Is it to help hold them together? or to fill them out?Dont have any breadcrumbs, will they fall to bits if I dont use them?

its to bind it all together, and you use fresh bread crumbs. or if you dont have bread, use a few tblsp os flour instead.

Do you mean minced meat patties?There is actually no need for breadcrumbs or flour unless you need to bulk up the meat.The minced meat will hold together by itself as long as you don't add large bits of onion.If you want to add onion, grate it coarsely.
