funny you should mention "pearl c/c'.i cooked a packet this week and ummmm not too keen on it.it actually reminded me of tapioca. MO

Well it is a pasta made from wheat flour. It is not the "real couscous" made from cracked wheat berries. Completely different things.

holly-rocks, are you sure that what you buy from the bulk bins at New World is Israeli couscous!Israeli couscous is not the instant variety that doesn't really require any cooking.
The Israeli couscous 'pearls' are much bigger and definitely require cooking - have a look at the picture at:-

Yes it is MADE FROM semolina, while the original couscous IS semolina.

Here you go: cracked wheat berries = couscous:

Your normal supermarket pasta is also MADE FROM semolina - if it is a good brand.

olwen.took my 2 daughters to that shop,while on holiday in lovely Blenheim. they have lived there for years and never been in. we got lots of goodies, and prices seemed very good.

This is what I do, browning it first gives it a real yummy nutty flavour. I then add chicken or vege stock and cook 10ish mins. You want it al dente so it's not all gluggy. The recipe I make has asparagus/beans, cranberries, toasted almonds and a gorgeous dressing with maple syrup,mustard and a whole lot of herbs. It's by far my fave salad ever mmmmm.
