Roast Veg & Couscous salad Annabelle Langbein

Can anyone please help with this recipe. I have ordered the cook book through Flybuys but our Paper plus store has to reorder and I am not sure how long it will be?

Coucous w Roasted Vegetables-Annabel Langbein

2 red onions,peeled
3 med beetroot peeled/10-12 baby beets,scrubbed
200g pumpkin,skin and seeds removed
6 sm or 3 med carrots,peeled
2 kumara peeled
3 TBS evoo
2TBS maple or golden syrup or honey
Salt and ground black pepper
2c couscous
Finely grated zest of orange
1tsp salt
2c boiling water
1/2 packed cup of mint leaves(abt 50) chopped or torn
1/4c lemon juice
1/2 c shelled unsalted pistachio nuts,chopped

Oven @180C

Halve onions lengthwise and cut into 2cm wedges.Cut med beetrootinto 2cm chunks or baby beets into quarters.Cut pumpkin,carrots and kumara into 2cm chunks.

Place the veges in a very large roasting dish or two,and spread out in a single layer.Drizzle with extra virgin olive oil and maple/golden syrup/honey.Season to taste.Roast for about 45mins or until tender and starting to caramelise.

In a large bowl mix couscous,lemon zest,salt and boiling water.
Allow to stand for about 10mins,then fluff up with a fork.
Add the roasted veges,mint and lemon juice to the couscousand toss gently to combine.Transfer to a serving bowl and garnish with the chopped pistachios.

i made this it is super yummy! Am making again for xmas day. So must put beetroot on the shopping list.

when it says add lemon zest, I'm guessing you mean orange?
