I suppose you will need a wheat free cake or biscuits for rum balls.

half a pak of cream cheese, 1 packet of biscuits. crush biscuits, mix with the soft cream cheese, roll in whatever you want, crushed nuts, hail, coconut etc.

100gms butter melted + 2 c icing sugar + 2 tsp cocoa + 1/2 - 1 tsp essence (depending on what flavour you desire) I use peppermint and then roll the truffles in to balls and put in fridge for 1 hr - then roll them in melted dark chocolate. If i use vanilla essence I roll the truffles in milk or white chocolate - or choc hails, or nuts etc All my gluten free friends really enjoy these :)

Likewise the biscuits used in the truffle recipe at#4 would need to be wheat-free.:-))
