Does anyone have any recipes that are packed with glazed cherries as I love them, I thought there may be a truffle recipe out there. Any ideas appreciated. TIA.

When I read the recipe on here for "bounty Bars', it occured to me that you could also make truffles similar to "cherry Ripe" bars which are full of cherries. Will bump the Bounty Bar recipe for you.

Cherry Ripe Bites
• 4 cups desiccated coconut • 400 g red glace cherries, chopped • 2 tablespoons cherry brandy, flavoured essence • 3 drops red food coloring • 395 g sweetened condensed milk • 375 g dark chocolate • 30 g Kremelta Combine coconut, cherries, essence, food colouring and sweetened condensed milk, mix well. Roll heaped teaspoonfuls of mixture into balls. Place on tray, refrigerate until firm. Melt chocolate and Kremelta or oil together. Re-roll balls before dipping into chocolate mixture. Place on baking paper lined tray to set. Re-dip in chocolate mixture if necessary or if you like a thicker chocolate layer

Chocolate Cherry Slice cherry ripe Ingredients: 2 & 1/2 cups desiccated coconut 400g red glace cherries, halved 395g can sweetened condensed milk 100g Kremelta, melted Red food colouring, to tint 375g bag Dark Choc Melts
Method: Grease a 19cm x 30cm lamington pan. Line base and sides with baking paper. Combine coconut, cherries, milk and Kremelta in a large bowl. Tint mixture pink with red food colouring. Knead to combine. Set aside. Place chocolate in a heatproof bowl. Stir bowl over a pan of simmering water. Stir until smooth. Spread half the chocolate over base of prepared pan. Refrigerate for about 10 minutes, or until set. Firmly press coconut mixture over chocolate. Spread remaining chocolate over coconut mixture. Refrigerate for about 30 minutes, or until set. Lift slice from pan. Using a serrated knife, cut into small bars. Tip: Slice can be made up to five days ahead. Store in an airtight container in refrigerator.

what kind of essence would you use,is there a cherry essence? these sound just what my hubby would like,so plan to make up a batch.Have brandy,but he's not into alcohol so was wondering which essence.Thanks

have a look at the different essences, Almond essence, I find, has about the same taste as cherry. Or see if you can get cherry juice , there is only 2tbs , to use.
also here is another , easier recipe that has no alcohol
Cherry Ripe Slice Ingredients Base 125 g butter 1 tablespoon cocoa ½ cup icing sugar 1 cup plain flour
Filling 1 x 395 g can sweet condensed milk ½ cup chopped glace cherries 1½ cups coconut Cochineal
Top 125 g chocolate 60 g butter Method 1. Base: Melt butter with cocoa in saucepan. Remove from heat, add icing sugar and flour. 2. Mix and press into a lamington tray which has been lined with foil or baking paper. 3. Bake at 160°C for 10 minutes. 4. Filling: Blend filling ingredients together and spread over base. Bake for approximately 20 minutes until set. 5. Allow to cool. Top: Spread with combined melted chocolate and butter.
