how much do i beat the egg white? before rolling in sugar

is there a way to do it, and how ahead of time can i do this. . one day? would the keep

You only need to beat the egg white lightly. Use caster sugar and then once rolled in the sugar, spread them out onto baking paper to dry overnight. Make sure the fruit does not touch each other while drying.
