I freeze my baking all the time and it is fine.I find if I don't then it doesn't last like I need it too (for lunches etc).Also if you freeze it and take it out in the morning, then the icing generally doesn't come off like it can do.I make a biscuit fudge that I do this with , as well as cakes, cupcakes, muffins etc.good luck
