I don't like ginger crunch made with coconut - the coconut seems to be used in place of making a crunch shortbread-like base.
Can you just replace the coconut with more flour or do you need to add a bit more butter as well!

Edmonds recipe annie. not true G.C if recipe has rolled oats, coconut etc. 125gr butter 125gr sugar 200gr flour 1tsp gr ginger 1tsp b/powder Cream butter & sugar. Add dry ingredients. Knead well & press into spongo roll tin. Bake 20 - 25 mins @ 190. Topping (I double), 4TBSPs butter, 8 TBSPs i/sugar, 4tsps g/syrup, 2tsps gr ginger. Heat until melted, then pour over base while hot.

This one? Base 150 g butter 2 tablespoons golden syrup 3/4 cup brown sugar 3/4 cup coconut 1 1/2 cups rolled oats 3/4 cup flour 1 1/2 teaspoons baking powder 1 1/2 teaspoons ground ginger Preheat oven to 180 degrees Celsius. Melt butter, golden syrup and brown sugar over a low heat. Mix the dry ingredients in a bowl and pour in melted ingredients. Mix well and press into a lined 20 x 30cm slice tin. Bake for 20 minutes. Icing 4 tablespoons butter 8 tablespoons icing sugar 4 teaspoons golden syrup 2 teaspoons ground ginger
Melt butter and golden syrup, beat in ginger and icing sugar. Pour over still-warm base. Slice into small squares when cold. (I wait until the next day if possible).

I have made this and I like it very much, I'm a fan of oats anyway. I also put in chopped crystallized ginger after having that in a cafe once - yummy!

coconut will spoil it...too much going on in some of the recipes
When cool, ice with:
4 Tbsp butter
8 Tbsp icing sugar
4 teaspoons golden syrup
2 teaspoons ground ginger
Heat, melt, beat and pour hot icing over cool base

Interesting.....Ingredients-wi- se the recipes at #2, #3 and #8 are all the same and otherwise the only differences appear to be in the cooking time and when the icing is poured over the base - whilst it is still warm or cool.:-))

TAKAKA OATY GINGER CRUNCH from The Wholemeal Cafe, Takaka, Golden Bay
Melt: 150 gm butter 2 Tablespoons golden syrup (try to be precise - hold the spoon in boiling water before measuring golden syrup) 3/4 cup brown sugar
When cool, ice with: 4 Tbsp butter 8 Tbsp icing sugar 4 teaspoons golden syrup 2 teaspoons ground ginger Heat, melt, beat and pour hot icing over cool base

l vote for Takaka as well and l found cooking it a bit longer to make the base more crunchy and l read somewhere that you put the icing on while hot and put it in the oven to glaze it and it is really nice done like that and l put glaced ginger in the topping also, yum
