Takaka Oaty Ginger Crunch

This Oaty Ginger Crunch from The Wholemeal Cafe in Takaka, Golden Bay, is a delightful treat with a crunchy oat base and a sweet, spicy ginger icing.

For the Base:
▪️ 150g butter, melted
▪️ 2 tablespoons golden syrup
▪️ 3/4 cup brown sugar
▪️ 3/4 cup coconut
▪️ 1 1/2 cups rolled oats
▪️ 3/4 cup flour
▪️ 1 1/2 teaspoons baking powder
▪️ 1 1/2 teaspoons ground ginger

For the Icing:
▪️ 4 tablespoons butter
▪️ 8 tablespoons icing sugar
▪️ 4 teaspoons golden syrup
▪️ 2 teaspoons ground ginger

1. Prepare the Base: Melt the butter, golden syrup, and brown sugar together in a saucepan. In a separate bowl, mix the coconut, rolled oats, flour, baking powder, and ground ginger. Combine the wet and dry mixes.

2. Bake the Base: Press the mixture into a 20 x 20 cm pan. Bake at 180°C for 25 minutes. Let it cool.

3. Prepare the Icing: Melt the butter, icing sugar, golden syrup, and ground ginger together. Beat until smooth. Pour the hot icing over the cooled base.
