The wholemeal ginger crunch recipe from #'s 2,3 & 8 are the same as one that appeared in The New Zealand Listener some yeas ago as Takaka Ginger Crunch. It is totally scrumptious and the coconut doesn't spoil it at all. Has been a family favourite since I first made it.

make your ginger crunchbut cook the base about half the normal time - until it is nearly set. Add the icing and pop back into the oven for another 5 - 10 mins so the icing melts and bubbles. goes fudgy as the icing soaks into the base.
