I am after some ideas for a couple of desserts I can make and freeze, have a dinner party next week but working until 5.30pm for the 4 days before hand so though I would be organised but am stuck for inspiration!! Any thoughts??

Cheesecake freezes well. Chocolate eclairs, sticky date pudding, freeze the cake and make the sauce on the day.

Mississippi Mud cake. Just gnache it on the day or the day before.

Rolled pav filled with cream and passonfruit sauce, comes out of freezer as good as it went in.., .. Individual apple/berry crumbles, a rich chocolate cake, just add berry couli and cream/youg before serving
