I need to make my Xmas cake quickly, can I cream the butter & sugar in the food processor?

Do you have a plastic whipping blade with your processor? If so, yes you could. Dont use a metal blade as this is for cutting rather than blending/mixing.

You can, but I find it doesn't fluff it up quite the same as my good old trusty Kenwood.

I don't think it gets nearly as well aerated but what about doing it in the processor then a few minutes doing the final whip by hand?

I stopped creaming butter and sugar years ago. Instead, I beat the eggs and sugar till really light and frothy, then beat in the butter that has been previously melted. My cakes come out way lighter and more moist and of course this method is way quicker.

I have a friend who does that too, and she seems to have success.
