I have a can of peaches

and most other baking ingredients except eggs. Can anyone recommend what I should bake?

Wrinkles7, I have made this cake very successfully without eggs and using canned fruit instead of fresh. I reduced the sugar to 3/4 cup and put in 1 tbsp of golden syrup as an egg substitute.

Kelly's Fresh Peach Cake

190 g softened butter
1 c sugar
3 large eggs
3 c fresh peaches peeled and thinly sliced
3/4 c yoghurt
3/4 c walnuts chopped
Juice of 1/2 lemon
2 t grated lemon rind
2 c flour
2 heaped t baking powder

Cream butter and sugar very well until mixture is light, add eggs and beat well, then stir in peaches yoghurt, walnuts, juice and rind. Fold in sifted dry ingredients being careful not to overmix.

Pour into a greased 20cm tin with baking paper in the base and bake at 170-180C for 45-60 mins or until a skewer comes out clean.

This recipe comes from Annabelle White's Best Recipes. It is delicious served dusted with icing sugar and a large dollop of yoghurt or whipped cream.
