Red Pepper Jelly recipe! Has anyone got a recipe for red pepper jelly! It uses pectin (jam setting powder) and I think the capsicums are put in the blender. Also vinegar and sugar from memory. I've lost my recipe. Thanks

Hi Mcdouall. some recipes for you. :-) Beetroot Chutney: 6 med beetroot - peeled & grated, 2 med onions - finely chopped, 4 large apples - peeled & finely chopped, 2large oranges - finely chopped, 1C sugar, 1tsp grated lemon rind, 2Tbs lemon juice, 2C white vinegar, 1small fresh red chilli - finely chopped, 1 clove garlic - crushed, 1tsp coriander seeds.Combine all ingredients in a large pot, bring to boil then simmer, uncovered, for 1 hour or until mixture is thick. Pour into hot, clean jars and seal when cold. Makes about 8C. posted by winnie231

Two more Beetroot recipes from there: "Beetroot chutney: I am sorry this is in old measures but it is a very old recipe & very GOOD. 2 lb beetroot(after peeled)~1½ lb onions ~ 2lb sugar ~1 dessertspoon allspice ~ 1 dessertspoon salt.Mince all together( or in a whiz) and boil with 1½ bottles(1125 mls)vinegar for 20 minutes. Thicken with 2½ heaped tablespoons cornflour. Boil for another 5 minutes.This is really nice to have in your cupboard. posted by softlysoftly8"

"y Grandmother's recipe which I love is: 1 kg cooked diced beetroot, 3 teasp common salt, 1.5 kg skinned tomatoes, Pinch cayenne pepper 500 grms sugar, Small quantity cornflour, 750 grms finely chopped onions, 750 mls vinegar. Mix ingredients together, reserving 150 mls vinegar. Boil for approximately 1½ hours. Mix a small quantity of cornflour with the reserved vinegar and add to boiling mixture. Hi Pugswal. this is from TrademeCooks too: and sounds like what you're looking for. "RED CAPSICUM JELLY RELISH: 6 large Red Peppers (Capsicums), 3 cups of DYC Cider Vinegar, 8 cups white Sugar, 1 cup Liquid Pectin. (Now, I can only ever find powdered Pectin but I know liquid is available in some places.) Wash Capsicums well, cut in half, remove seeds and all white parts. Cut flesh into pieces, then chop finely in blender, food processor or with a knife (a lot of work). Place in a large pot & stir in the Vinegar and Sugar. Bring to a rolling boil stirring constantly. Add the Pectin & bring to the boil again. Cook, stir now & then, for about 30 minutes or until it will set on a cold saucer like a jam. Skim any scum. Pour into hot, clean, dry jars & seal when cold. About 6 cups yield. posted by rog.e"

Pak'n'Save still had them last season but said it was getting more and more difficult to get them from their wholesaler, the same for pectin. Not sure what is happening there, but I guess we need to be prepared to be cut lose by the big overseas companies, as NZ is just a very small fish in the commercial ocean. So better be prepared to cook from scratch in the near future :)

Red Pepper Jelly recipe I found it so here it is for those who might like to try it. Yummy over cream cheese as a spread on crackers, also with cheese on crackers. Nice with cold meat too. 1.5 cups minced or finely chopped red peppers, 1 cup cider vinegar, 30 to 35 grams powdered pectin, .5 cup water, 2.25 cups sugar. Mince or finely chop peppers. Put in large saucepan and add the vinegar and pectin mixed with the water. Boil, stirring frequently for 5 minutes. Add the sugar and boil briskly until a little amount sets on a saucer. Pour into sterilised hot jars and seal. The jars with pop down lids work a treat for this recipe. Enjoy!

.escambo.I was in mitre 10 the other day, I came across preserving jars in there. not what you are looking for, but at around $8.00 each I darn near fell over. Op shops are the best place, or like myself ask family and friends.next door.across the road.uli.plenty of pectin in our supermarkets, It is sold in a sachet, "King" jam set mix.

Bumping for Christmas and preserving season recipes. have made and bottled mint sauce and rhubarb now. looking forward to making goodies over the summer using veges from my garden, and newly producing fruit trees and berry vines. I'm growing 240 red onions, 100 brown onions, 120 shallots (great crop last year - saved these to grow this season), lots of garlic, tomatoes, cucumbers, herbs, etc. etc.

Preserving Cooked Chickpeas I love my Agee preserver and use it all the time to buy bulk tins and preserve them in several smaller jars to save money. I'm wondering if I could cook up a load of dried chickpeas and preserve them in smaller jars! If so, do you think i should make my own brine, or just use water! Thanks for your help! :-)

They're excellent jars for preserves, etc. hope you have someone to collect your jars. if not, Opp shops will take them. ps. just a note so that you don't get an email from Trademe. theirrules for the messageboards are that we can't include contact details of any kind in a post - I guess it also protects someone from being contacted by any number of other trader's too.

Hi Bees. I haven't used an Agee preserver, however would think that they would be fine processed in it. otherwise, chickpeas freeze well once cooked. and don't take long to thaw out either. let us know how you get on. thanks. :-)

Countdown Johnsonville had some jars last year.You could roll up and ask if they can order some for you.Or maybe give them a ring.And I'm sure I saw some in Woolworths Tawa a couple of years ago.Upper Hutt might also be a good place to phone - there are still a lot of preservers living up there.
