Madhur Jaffrey's Sweet Tomato Chutney Not in metrics but like most chutneys abit of give & take is okBlanch, peel & chop 2lbs tomatoesDissolve 14oz sugar in 16fluid oz white vinegar, add 1/4 tsp of each of the following:cumin seeds;fenugreek seeds;mace;garam masala;cayenne pepper;1/2 tsp pdr ginger;1&1/4 tsp salt; 2 bay leaves;10 cloves garlic peeled & roughly chopped. Cook 40 mins & add 1 oz raisins. Cook until thickened Watch carefully as will catch easily.should be no longer watery with with a nice dark sheen.

Christmas Mince My recipe made enough for 2 years and I just kept in the fridge, it did have 1/2 cup brandy which may have helped and it was just fine.

Hi 43! The marbles keep the mix moving on the bottom of the pot - as it boils the movement moves the marbles and the mixture goes with the marbles - a darling friend taught me that wee trick, and it was soooooooo simple i thought - how come i didn't think of that!it really does work and i do it with all my jams etc that will thicken as they cook.have a blessed day!christmas baking today - am addicted to christmas am happy to admit it!

.juliewn. You could probably flavour vinegar, with whatever you like. I am making vinegars from wines, made with the different fruits. I will be experimenting a bit as the 23 liters of cider has turned out great so far. It is a matter of aging it now. Like wise to my wine vinegar, that is easy to get too and the flavour is as good as the raw cider vinegar I add. My starter for both came from raw cider vinegar as not all wild yeasts will turn all the alcohol into vinegar, some will die, leaving a very low % of acetic acid, unfit for pickling food with. That was the biggest problem years back, also too much alcohol, creates a different problem.

Digby Law's APRICOT CHUTNEY "Terrific with cheese or in sandwiches" - Digby Law
3 Kg apricots 1 Kg onions 750g sugar 2 tsp salt 1 tsp each of whole cloves, black peppercorns, ground mace & curry powder 1/2 tsp cayenne pepper 4 cups malt vinegar
Remove the stones and coarsely chop the apricots. Finely chop the onions. Combine all the ingredients in a large saucepan and boil slowly for 1 hour, stirring often, especially towards the end of cooking time. Pour into hot, clean jars and seal. Makes about 3.5 litres. :-))

These are amazing: 6-8 sweet red peppers 1 large garlic clove 1/2 cup of: dry white wine, whitevinegar, cider vinegar, coarsely chopped onion. 2 tbsp granulated sugar. 1/2 tbsp dry (or 1tbsp fresh) oregano leaves 1 tsp pickling salt.
Char grill the peppers & garlic until black and blistered. Peel and deseed peppers when cold. cut lengthwise into 2.5 cm wide strips.
Combine all ingredents except peppers and garlic in a saucepan. Squeez roasted garlic out of skin, mash and add to saucepan. Boil quickly, reduce heat and boil gently for 5 mins.
Pack peppers in jars & cover boiling vinagar liquid.
Makes 2 x 500 ml jars or 4 x 250 ml jars,
process 15 mins for both 250 ml and 500 ml jars.

What I used them for. I use these for antipasta, in salads. As a cold relish on veal/lamb steaks. As a stuffing in rolled up fish kebabs +++++

Tomato Pineapple Jam 1kg ripe tomatoes, 1 large cooking apple pulped, 1 large pineapple (or 2½ cups tinned pineapple) 1/3 cup lemon juice, 6½ cups sugar. METHOD: Scald, peel and crush tomatoes with the back of a spoon. Bring to boil and simmer 10 minutes. Remove core from the pineapple and mince, add to tomatoes with the lemon juice, apple and sugar. Boil hard for 10 minutes then simmer till it sets. Add more lemon juice if needed to aid setting.

Tomato Passionfruit Jam 1.25 kg ripe tomatoes peeled and chopped. 4 large Granny Smith apples peeled and chopped. 1 1/3 cups passionfruit pulp, 1/3 cup lemon juice. 1kg sugar warmed. METHOD: Combine the tomatoes and apples, simmer for about 25 minutes. Strain the passionfruit over a medium bowl. You will need to extract ¾ cup of juice. Stir in the lemon juice, passionfruit juice and 2 Tbsp of the seeds and sugar. Stir without boiling until the sugar is dissolved. Boil for about 40 mintes then test.

Just wanted to say This is an inspiring thread! I am just starting on baby steps with preserving (lemon honey and marmalade as I like it) . and just started feeding my baby from jars, so all those perfect little jars on the draining board are tempting me to try making some jellies. Thanks ladies!

Chilli and Ginger Tomato Jam (Jamie Oliver) 3tbsp peanut oil, 1 very finely sliced onion, 5 cloves garlic sliced, 3 red hot chillies (very hot), ½ cup very finely sliced ginger, 1tsp salt, 4 tbsp cider vinegar, 1 cup sugar, 8 chopped tomatoes.
Soften onions, add garlic, ginger and chillies then rest of ingredients. Simmer until reduced by half.

The spiced vinegar is sold where malt and other vinegars are in supermarkets. it's usually available in the 750ml bottle, and sometimes in a 2 litre bottle. It has a nice flavour, and a little can be tossed through a lettuce type of salad - or a rice salad, just before serving - it gives a nice tangy flavour.

Hi Tomdrum. I hope you enjoy making your own preserves. if you're looking for larger jars, Opp shop's usually have pop-top type jars very cheaply for sale - around 10c to 20c each - if you purchase some, check under the lids to make sure they haven't rusted, as they can rust if the lids are placed on the jar while the jar and lid are still damp. Isn't Lemon Honey delicious. yum!. I'm looking forward to having enough lemons on my young tree next winter to be able to make some again.

Hi.
I don't know if they'd be available new now. I haven't seen them in quite a few years.
I'd look for them at Opp Shops. if there aren't any jars on display, ask for them as they often keep jars out the back of the shops.
Or ask if they might be able to locate some for you - one of the staff might have some at home that they no longer need and would be happy to sell them.
