One of my Girls would ask my nicely for a Victoria sponge cake for her birthday. I would think there are several recipe's for that on here.
whole orange muffins are very moist, a nice orange icing and you have a true birthday treat.
Orange Muffins.
Whizz up 1 whole orange
1 egg
1/2 cup of canola oil
1 small cup of sugar..
Sift
1 and 1/2 cups of plain flour
1 teaspoon baking powder
1 teaspoon of baking soda..
mix the wet into the dry.
Makes 12 muffins, it is a wet mixture.
bake 20 minutes @ 180 % c
These would make nice cup cakes as well as they have a nice round tops
I cut the thick top and bottom from my orange, and added more orange to make up the volume.

yes. they are nice . right now we have the very nicest navel oranges in most areas.
be careful of too much pith though, some oranges have way too much. Remove the pips.

This is the recipe I use all the time to make Birthday cakes. You can even leave out the eggs if you ever need to.

Chocolate Cake

1 cup water
115g butter or marg
3 Tbls cocoa
¼ tsp of baking soda
1 cup sugar
2 eggs
1 tsp vanilla
2 cups SR flour/ or 2 cups of plain flour and 2 tsp baking powder

Pre-heat the oven to 180oC.
Place the water, butter, sugar, baking soda and cocoa into a pot. Bring to a simmer, simmer for 1 minute. Let the mixture cool down, add lightly beaten eggs and vanilla. Add the sifted flour and mix well.
Pour into a well greased cake pan. Cook for 45 - 50 minutes.
