Sticky date and pear puddings (Makes 12)
1 cup dates, halved 1 t baking soda ½ cup boiling water 50g butter, melted ¼ cup sugar 1egg beaten ½ cup Cottee maple syrup 1 + ½ cup self raising flour 410g tin Watties pears in fruit juice, drained and chopped yoghurt to serve
Preheat oven to 180C. Lightly brush or spray muffin tins with oil. Combine dates, baking soda and boiling water and leave to stand for 15 minutes or until dates have softened and cooled. In a large bowl, mix butter and sugar together, add egg and ¼ cup maple syrup, beating well. Siftflour and gently fold in, adding the chopped pears and the date mixture including any liquid. Place a little of the remaining maple syrup in each muffin tin and place batter on top. Bake for 20-25 minutes or until a skewer comes out clean. Serve with yoghurt.
My husband loved these. . therecipe is from a library book, I didn’t write down which one…It’s from a Watties sponsored TV programme and both the book and programme were called Let’s live or was it Let’s cook …I suppose you could simply leave out the pears…
