Preheat the oven to 180 C Put the softened butter, the first measure of sugar, and the vanilla essence in a bowl and beat until creamy. Add the second measure of sugar a bit at a time and beat until thick and glossy. Fold in the coconut gently. Spread the meringue over the base. Bake for 25 minutes.
