Quick hot pudding...guests arriving

at 6. 30pm and I only have two eggs in the house. Any ideas?

Self saucing, Choc pudding
in a basin put 1 cup of flour, 1 tsp baking soda, 2 tsp cream of tartar, 2 Tblsp cocoa, 1/2 cup sultanas... . mix with 1/2 cup of milk, to make a stiff dough. Note No sugar. Pour over, 1 cup of boiling water 2 tsp golden syrup, 1/2 cup of sugar, 50 grams of butter. Steam 30 minutes. serve with custard, a dollop of cream or ice cream. enjoy.

Fruit Crumble with custard, cream, icecream, yoghurt (whatever you have on hand) - no eggs needed and use whatever fruit you have available (fresh and/or canned - a nice and different combo is canned peaches with bananas). Have a look at:-

Roasted Autumn Fruits. Take apples, pears, nashi (whatever you like or have), wash and slice (I leave the skin on, but this is optional). Put in a large baking dish lined with baking paper. Add a handful of nice raisins and a handful of dates and walnuts. Now mix together equal proportions of brown sugar and balsamic vinegar. Toss the fruit in the balsamic sugar mix and bake at 190-200C for about 15-20 mins. The fruit will slightly soften and the raisins and dates go lovely and caramelly. Serve either warm or at room temperature. For non dairy free guests this could be served with a scoop of icecream or blob of yoghurt (if desired). But it truly is delicious by itself :-)

Easy Lemon self saucing pud, very tasty, could substitiute oranges
50g butter,
200g caster sugar,
1 lemon , zested,
100ml lemon juice (include the zest from the zested lemon),
3 eggs , separated,
50g plain flour , sifted,
250ml milk,
icing sugar for dusting.
1. Heat the oven to 180C/fan 160/gas gas 4.
Whizz the butter, sugar and lemon zest until they are pale and creamy in a food processor. Add the lemon juice, egg yolks, flour and milk one by one until you have a smooth batter.
Whisk the egg whites until firm but not stiff, and fold the two mixtures together.

Pour into a buttered ovenproof soufflé or baking dish and put it in a baking tray half filled with hot water.
Bake for 45-50 minutes until the top is lightly browned and set and there is a sort of gooey lemon curd below. Remove the dish from the tray, dust with icing sugar and serve hot, with or without cream.

I'm making self saucing choc pudding tonight, was thinking of putting some defrosted frozen berries in it. Reckon it would work/ be tasty?
