peanut butter cookies . I cup peanut butter (crunchy is best) . Just under 1 cup suger. 1 egg. 2 desert spoons cornflour (or rice flour) Mix. Roll into balls and flatten into biscuit shapes. Bake 180 for 15-20 mins untl golden brown. Costs about $1.60 for a large batch and they're gluten free!

APPLE CINNAMON AND BRAN MUFFINS

In a large bowl mix:
1 cup wholemeal flour
1 cup wheatgerm
1 cup bran
1 teaspoon cinnamon
1 t baking soda & baking powder
In a med size bowl add and warm:
2T golden syrup
1 cup trim milk
Combine wet and dry ingredients then add:
1 cup grated apple
1 cup sultanas (optional)
Fill muffin tins and bake for approx 20 mins at 190 degrees celsius
These are very filling and healthy too. If you are feeling extravagant you spread them with butter.

Scones are cheap and liked by most.Pikelets also.
I can remember seeing recipes for large quantities of biscuits. Dont have one myself but someone here prob will.

Anzazc biscuits are easy and cheap, and keep well in an air tight container.
Anzac Biscuit Ingredients

1 cup plain flour
I cup sugar
1 cup rolled oats
1 cup desiccated coconut
4 oz butter
2 tablespoons boiling water
1 tablespoon golden syrup
1 teaspoon bicarbonate of soda

Anzac Biscuit Directions

Preheat oven to 180 degrees Celsius (or approx 375 degrees F).( I cook mine at 150oC)
Grease a biscuit tray or line with baking paper.
In a large bowl, combine all the dry ingredients.
In a small saucepan over a medium heat (or in a microwave proof jug or bowl in the microwave), combine the butter and golden syrup until the butter has melted.
In a small bowl, combine the boiling water and bicarbonate of soda.
Add the bicarb and water mixture with the melted butter and golden syrup.
Combine all ingredients in a large bowl.
Mix thoroughly.
Dollop teaspoonfuls of the biscuit mixture onto the greased baking tray.
Don't forget that the biscuits WILL spread during baking, so make sure you leave room for them to spread!
Bake for 12 minutes, or until golden brown.
Remove from oven.
Allow the Anzac biscuits to cool on the tray for a few minutes before removing to a cooling rack.

Caramel Anzac Slice - A shortcake base, caramel filling and an oaty Anzac Biscuit style topping.
Base: 200g butter softened (I have used margarine and it works)
150g sugar, 1 tspn vanilla extract, 2 cups flour, 1 tspn baking powder,
Caramel Filling - 385g can sweetened condensed milk, 25g butter, 1 tblspn golden syrup.
Topping- 1 cup rolled oats, 1/2 cup coconut, 1/4 cup each of flour and brown sugar, 70g butter diced (margarine again can be used)

Preheat oven to 175c.line a 20cm x 30cm slice tin or shallow glass baking dish with baking paper.
Base: Cream butter and sugar until light and fluffy.Stir in vanilla and sifted flour and baking powder.Press into tin using floured fingers as the mixture will be soft.bake 10-12 mins until pale golden brown.
Caramel: place the condensed milk, butter and golden syrup in a small saucepan and cook over a med. heat for 3-4 mins, stirring constantly until golden and thickened.Spread over the warm base.
Place topping ingredients in lg bowl and rub in butter with fingertips until crumbly.sprinkle crumble over caramel and pat down gently. Bake 15-18 mins until golden and bubbling.Colliln tin before cutting into slices.Slice will keep in an airtight container for 3-4 days.makes about 24 pieces.(Didnt last that long in our house though, too yummy)Enjoy!

Crisp Coconut Biscuits 125g butter;1 cup caster sugar;1 egg;2 cups s.r flour;pinch salt;1 cup coconut;extra caster sugar.
Cream butter & sugar,beat in egg,add sifted flour,salt & coconut. Roll into balls and press flat between palms of hands. Dip tod side in extra sugar. Place on greased trays,sugar side up;allow for spreading. Bake in mod hot oven 10-15 mins. Makes about 40

The topping for a pikelet in Aunt Daisy's day was good old golden syrup, and the tip she gave was to mash - 'smoosh' - the butter with the golden syrup before spreading it on the pikelet.

further to the recipe posted in thread 17 for the instant pudding biscuits.
I now buy different flavour instant puddings and make different biscuits. If I buy the butterscotch I use the raisins; if I buy a chocolate instant pud then I add choc chips and I have also bought the banana instant pudding and added choc chips to that.They all taste yum :)
edited to add that I usually make a couple of batches and get heaps from each batch. I then freeze most of them into smaller quantities after they have been baked so hubby doesn't eat them all at one time. They freeze well.

Homemade fruit leathers
• 5 large apples
• 1 punnet strawberries
• 1 cup water
Method:
Peel and core the apples, slicing thinly.
Hull and halve the strawberries.
Place all fruit in a pot with the water. Place a lid on.
Cook until soft and then puree with a stick blender.
Line a tray with baking paper and pour the fruit mix onto the baking tray.
Spread evenly and thinly.
Place in the oven and turn on, setting the temperature to 120°C.
Prop the oven door open with a wooden spoon.
This dehydrating process can take anywhere from 2 hours to 10 hours depending on the type of fruit and the level of moisture left in the mixture.
Slice and roll up in cling film to keep.
dont need to use strawberries just use what you like.

Vanilla/choc chip biscuits
125g Butter
125g Sugar
van essence a few drops
1 Egg
225g flour
1 tsp B.Powder
50g choc chips / choc melts how ever many you want
( I roughly chopped 100g choc melts so it was a bit chunky and placed 1 on top before cooking.)
Cream butter, sugar and van essence together, add egg then mix in dry ingredients.
Roll tsp fulls of mixture into balls and place on greased tray and flatten.
Bake 15 - 20 min at 190deg.
