Anyone have any cheap baking recipes, ideas for kids lunches etc. Would also love a muesli bar and instant pudding biscuit recipes. TIA

APPLE CINNAMON AND BRAN MUFFINS

In a large bowl mix:
1 cup wholemeal flour
1 cup wheatgerm
1 cup bran
1 teaspoon cinnamon
1 t baking soda & baking powder
In a med size bowl add and warm:
2T golden syrup
1 cup trim milk
Combine wet and dry ingredients then add:
1 cup grated apple
1 cup sultanas (optional)
Fill muffin tins and bake for approx 20 mins at 190 degrees celsius
These are very filling and healthy too. If you are feeling extravagant you spread them with butter.

check out the cakes thread. We used to have a great biscuits and slices thread which was HUGE... . sadly It think it has disappeared.

Scones are cheap and liked by most. Pikelets also.
I can remember seeing recipes for large quantities of biscuits. Dont have one myself but someone here prob will.

Anzazc biscuits are easy and cheap, and keep well in an air tight container.
Anzac Biscuit Ingredients

1 cup plain flour
I cup sugar
1 cup rolled oats
1 cup desiccated coconut
4 oz butter
2 tablespoons boiling water
1 tablespoon golden syrup
1 teaspoon bicarbonate of soda

Anzac Biscuit Directions

Preheat oven to 180 degrees Celsius (or approx 375 degrees F). ( I cook mine at 150oC)
Grease a biscuit tray or line with baking paper.
In a large bowl, combine all the dry ingredients.
In a small saucepan over a medium heat (or in a microwave proof jug or bowl in the microwave), combine the butter and golden syrup until the butter has melted.
In a small bowl, combine the boiling water and bicarbonate of soda.
Add the bicarb and water mixture with the melted butter and golden syrup.
Combine all ingredients in a large bowl.
Mix thoroughly.
Dollop teaspoonfuls of the biscuit mixture onto the greased baking tray.
Don't forget that the biscuits WILL spread during baking, so make sure you leave room for them to spread!
Bake for 12 minutes, or until golden brown.
Remove from oven.
Allow the Anzac biscuits to cool on the tray for a few minutes before removing to a cooling rack.

Caramel Anzac Slice - A shortcake base, caramel filling and an oaty Anzac Biscuit style topping.
Base: 200g butter softened (I have used margarine and it works)
150g sugar, 1 tspn vanilla extract, 2 cups flour, 1 tspn baking powder,
Caramel Filling - 385g can sweetened condensed milk, 25g butter, 1 tblspn golden syrup.
Topping- 1 cup rolled oats, 1/2 cup coconut, 1/4 cup each of flour and brown sugar, 70g butter diced (margarine again can be used)

Preheat oven to 175c. line a 20cm x 30cm slice tin or shallow glass baking dish with baking paper.
Base: Cream butter and sugar until light and fluffy. Stir in vanilla and sifted flour and baking powder. Press into tin using floured fingers as the mixture will be soft. bake 10-12 mins until pale golden brown.
Caramel: place the condensed milk, butter and golden syrup in a small saucepan and cook over a med. heat for 3-4 mins, stirring constantly until golden and thickened. Spread over the warm base.
Place topping ingredients in lg bowl and rub in butter with fingertips until crumbly. sprinkle crumble over caramel and pat down gently. Bake 15-18 mins until golden and bubbling. Colliln tin before cutting into slices. Slice will keep in an airtight container for 3-4 days. makes about 24 pieces. (Didnt last that long in our house though, too yummy)Enjoy!

Crisp Coconut Biscuits 125g butter;1 cup caster sugar;1 egg;2 cups s. r flour;pinch salt;1 cup coconut;extra caster sugar.
Cream butter & sugar, beat in egg, add sifted flour, salt & coconut. Roll into balls and press flat between palms of hands. Dip tod side in extra sugar. Place on greased trays, sugar side up;allow for spreading. Bake in mod hot oven 10-15 mins. Makes about 40

Ginger Loaf
50g Butter
3 Tspn Golden Syrup
1/2 C Sugar
1/2 C Boiling Water
1 Egg
2 tspn Ginger
1/4 tspn BS
1/2 tspn BP
1 C Flour
Place butter, sugar, golden syrup and boiling water in a bowl and stir until melted.
Add egg and whisk briskly (I let it cool down a bit first!)
Add dry and mix.
Place in loaf tin.
30 mins approx at 180
If you love ginger, add some chopped crystallized ginger.
Great with chopped apple and or sultanas also.

COCONUT LOAF
In a bowl mix together
1.5 cups flour
1.5 tsp bp,
1.5 cups coconut,
1 cup sugar,
1.5 cups milk,
2 tsp vanilla essence.
Bake at 160-180 deg C for an hour or so.
You can add the juice and zest of a couple of lemons with or with out sultanas too.
Devine!!
And yip, no eggs and no butter in this one!!

Apple Crumble Slice
1 1/2c self raising flour,
1 1/2c coconut,
1/2c caster sugar,
185gm melted butter,
1 egg, 1 tsp cinnamon,
1 x 425gm can pie apple well drained.
In large bowl combine flour, coconut, sugar and cinnamon.
Mix in melted butter & egg.
Press half the mix into a lined slice pan.
Cover the base with apple.
Crumble remaining mix over top.
Bake @ 180°C for 35-40mins until golden.
Would be cheaper if you made your own apple slices!

Basic Muffin Mix
Bowl 1
4 tsp BP
2 C flour
3/4 C Sugar
Bowl 2
1/2 C Oil
1 C Milk
1 egg
Add bowl 1 to bowl 2.
Just mix.
200 for approx 15 mins
Add cocoa, fruit etc as you wish:)
grate apple, pears etc and add a sprinkling of Cinnamon and sugar mix over the top before baking!

Fibre Muffins
BOWL 1
1/2 C Sugar
1 Tbspn BP
1 1/4 C Flour
Mix.
BOWL 2
2 C All Bran
1 1/4 Skim Milk/Milk
Stand 5 mins
add to bowl 2
1/2 C Apple Sauce
1 Egg
Mix.
Add bowl 1 to bowl 2 and just mix.
Spoon into muffin trays.
Bake 20 mins at 200
You can add spices, dried fruits etc or even chopped apple, pears to this.

Instant Pudding Biscuits as posted by raewyn64

150g butter
1 cup sugar
1 egg

Cream butter & sugar & add egg.
Add 1.5 cups flour, 1 tsp. baking powder, 1 packet butterscotch instant pudding, 1 cup sultanas.

Mix all well together.
Small balls on a greased tray - press lightly with a fork.
Ten minutes in oven @190 degrees.

*edited to add* - 1 batch makes approx 40 biscuits

The cheapest baking uses all carbs and nothing else (cause carbs are very cheap) - flour, sugar, cheap raisins, syrup.
As soon as you add real food to it like butter or eggs - it gets more expensive.

1 1/2 c. flour
1 c. sugar
1 tsp. baking soda
1/2 tsp. salt
3 tbsp. cocoa
1 tsp. vanilla
1 tbsp. vinegar
5 tbsp. oil
1 c. water

Sift together flour, sugar, baking soda and cocoa. Add vanilla, vinegar and oil. Beat until smooth. Pour into ungreased cake pan. Bake at 350 degrees for 35 minutes.

Easiest Chocolate Cake
-No Beating, No Eggs
This chocolate cake is moist, cheap and easy to make. Great for large families.
3 cups flour,
2 cups sugar,
6 tabs cocoa,
1tspn salt,
2 tspns Baking Soda,
1 tspn Vanilla,
3/4 cup Oil,
2 tabs Vinegar,
2 cups water.
Mix all ingredients together and bake in oven tray or similar dish at 180 for approx 30mins.
Ingredients sound weird but it is absolutely brilliant, very tasty and moist, my 10 year old makes it.

Are you telling us that you think SUGAR is a food and that it is a REAL FOOD?!!!OMG. We learn something new every day.

Sugar is a food!!That thought just leaves me stunned. I always thought sugar was a non-nutritive, tooth rotting, weight inducing, diabetes inducing, food additive.

sugargives you instant energy. So yes, its a food. Fruit has natural sugar and so is honey, but honey is classed as whole food if I remember rightly!

Futher to lx4000 and the Instant Pudding Biscuits I often use a chocolate pudding and throw in a good handful of chocolate chips. Also good with the caramel or butterscotch or vanilla, with the choc chips.
